01 / ABOUT THE PLACE

About this place

A Warm Roppongi Counter Infused with Domestic Spirits

Occupying the 1st floor of a building in Roppongi 7-chome, Japanese Bar SYMBOL crafts inventive drinks using domestic ingredients and artisanal spirits. Set directly on the street, its open frontage leads into softly lit counter seating that feels accessible for a spontaneous drink.

Original Cocktails Rooted in Japanese Flavours

The menu highlights signature and original creations featuring tea, local condiments, and distinctive botanical elements. Standout pours include the smoky Ninja Negroni and the Samurai, alongside a wasabi-accented Wasabi Gin & Tonic, a refreshing Japanese Shiso Rum & Tonic, and an aromatic Hojicha Highball. Standard classic cocktails and traditional highballs are also readily mixed to suit any mood.

Artisan Gins and Japanese Whiskies

Regional domestic spirits are a core focus. Craft gins highlighting local botanicals—such as Roku, Kinobi, Kanomori, Awa, and Akitasugi—invite comparative tasting. The whisky selection is equally considered, featuring esteemed bottlings such as Yamazaki, Hakushu, Hibiki Japanese Harmony, Yoichi, and Ichiro's Malt, poured neat, on the rocks, or as highballs.

Hot Comfort Food and Relaxed Seating

To accompany the drinks, the kitchen turns out warm dishes such as sausages grilled in Nambu ironware and an assorted oden stew infused with bonito dashi. Classic bites like smoked oysters, prosciutto, and cheese platters round out the savoury selection. Beyond the indoor counter, the terrace seating offers a breezy spot to sip beneath the Roppongi evening sky.
